What new hydration habits did you develop during the COVID pandemic? First discovered in 2020 B.C. in China and Japan, the fermented effervescent tea called kombucha imparts probiotic and antioxidant benefits. Commercially bottled kombucha appeared in the 1990s fittingly in the U.S., and has spread to Germany, Russia, and more. This billion-dollar industry is growing almost 20% a year, to reach $7 billion by 2027.
